that could describe the weather, the food,
or the cultural cache Hispanic Heritage
Month (Sept. 15-Oct. 15) brings to The
Strip. Because we feel the love most

three Las Vegas restaurants led by
acclaimed female chefs, each bringing a
distinct perspective to The Strip.
At Cantina Contramar at
Fontainebleau Las Vegas, chef Gabriela
Cámara channels the seafood traditions
and effortless energy of her celebrated
Mexico City restaurant. Order the Pescado
a la Talla Contramar, a whole grilled fish
split between red adobo and a vibrant
parsley rub, served with refried black beans
and handmade corn tortillas.
At chica at The Venetian Resort Las
Vegas, Venezuelan-born chef Lorena
Garcia draws inspiration from across Latin
America, weaving together flavors from
Venezuela, Mexico, Peru, Brazil, and
beyond. Unmissable are the Quesa-Birria
Tacos, filled with birria beef and served
with rich jus for dipping.
At Border Grill at Mandalay Bay,
chef-owners Mary Sue Milliken and Susan
Feniger have spent decades championing
regional Mexican cuisine. Try the signature
Yucatan Pork, marinated with achiote,
braised in banana leaves, and paired with
caramelized plantains, guacamole, and
